I would try a bit of coconut milk instead of almond milk. They might be a little sticky to work with, but it should help. You could also add in just a touch (maybe 1/4 cup?) of unsweetened applesauce.

Quick question, I found the meatballs to be a little dry. Could I add some almond milk? I know normally you would add egg, breadcrumbs and milk so just thought maybe almond milk might help. It’s really an hour to prepare and cook, not 40 minutes.
