I make them Sunday night the whole week, and I get no bitterness, even with the last one of the week and it’s worked quite well. I at some point will try naturally dried pineapple without the added sugar, but I have a lot of this candies pineapple to go through first. 🙂

Hi, Sarah! We’re so glad you loved the overnight oats! The full fat coconut milk is just for the added creaminess, so if you want it to be less rich, lite coconut milk will work just fine =)

I was just wondering if there is a health-related reason for the full-fat coconut milk (for instance, I know that you absorb the nutrients in cow’s milk better if you drink whole milk) as it was pretty rich for my queasy morning tummy.

But now I see this one with the mango and using coconut milk i am definitely trying. I think i will puree the mango and pineapple together and squeeze in so its like a ribbon through it.
