After seeing how much sugar you use, I won’t be trying it, though. I regularly use 4 cups of strawberries + 6 cups of rhubarb but only 1.5 cups of sugar. I can’t imagine how sweet your jam must be.

Some rhubarb varieties stay green! We thought ours were never ripening, but they just barely get a little bit of pink on them, and sometimes none at all.
