Out of all the easy game day recipes out there, roast beef sliders are one of my personal favorites. The soft deli roast beef and yummy melted cheese pair perfectly with the sweet and spicy sauce in this recipe. These mini sandwiches are perfect for sharing and come together in minutes!

To make roast beef sliders, you’ll need:

  • Hawaiian rollsโ€”Any type of small roll works for this recipe, but we made the best roast beef sliders with Hawaiian rolls. Sara Leeโ€™s Hawaiian rolls are big and sturdy and just right for sliders, but Kingโ€™s Hawaiian rolls will work as well.
  • Spicy mustardโ€”Mustard always pairs well with roast beef, and we love the bit of kick that spicy mustard gives the sauce.
  • Worcestershire sauceโ€”The perfect mix of sweet and spicy, Worcestershire sauce has an umami flavor that works well with roast beef.
  • Garlic and onion powderโ€”These spices add a sweet and savory flavor to the roast beef sliders.
  • Deli roast beefโ€”Pre-cooked and pre-sliced deli roast beef has all the deliciousness of home-cooked roast beef with none of the hassle.
  • Sliced white cheddar cheeseโ€”White cheddar is one of the best cheeses to pair with roast beef.
  • Unsalted butterโ€”The butter gets brushed across the slider tops before baking, creating a yummy golden crust in the oven.

What cheese goes best with roast beef?

This roast beef sliders recipe calls for sliced white cheddar cheese because itโ€™s mild in flavor, melts well, and pairs great with roast beef. However, there are a few other kinds of cheese that would work well in this recipe: 

  • Provolone cheese is another smooth and mild cheese that has slightly nutty and salty undertones.
  • Havarti is a cheese with a very buttery texture and just a touch of sweetness.
  • Pepper jack cheese adds a hint of spice to your sandwiches while still melting well.

How do I make these sandwiches?

Roast beef sliders are as easy to make as they are to eat! There are only a handful of simple steps standing between you and your savory game day dinner.

  1. Prepare by preheating your oven to 350ยฐF and greasing a 9×12 inch baking pan.
  2. Slice the rolls in half and set the bottom portion of the rolls in a single layer on the baking pan.
  3. Mix the Worcestershire, spices, and mustard, then spread the mixture on the bottom rolls.
  4. Layer on the sliced deli roast beef, the cheese, and finally the tops of the buns.
  5. Give the tops of the rolls a brush with the melted butter, then cover the dish with aluminum foil.
  6. Bake covered for 20 minutes, then remove the foil and bake for another five minutes to brown the tops.

To make these sliders easier to serve, cut them away from one another after baking. This way your guests can grab oneโ€”or twoโ€”without touching the other rolls.

How do you know when the sliders are done?

These sliders are done when the cheese is melted, the roast beef is toasty warm, and the tops of the buns have a light golden brown crust on them. For most ovens, this will be 25 minutes after you put them inโ€”but keep an eye on your sliders in the last few minutes to make sure they donโ€™t burn.

Roast beef sliders are a tasty, easy-to-make recipe that's perfect for watching the big game.

Ingredients

  • 12 small rolls
  • 1 pound deli roast beef
  • 3 tablespoons spicy mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 ounces white cheddar cheese, sliced
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 350°F. Grease a 9”x13” baking pan.
  2. Slice the slider buns in half, placing the bottom portion of each roll neatly in the baking dish.
  3. In a small bowl, mix together the mustard, Worcestershire sauce, garlic powder, and onion powder. Spread the mixture evenly over the slider bottoms in the baking pan.
  4. Evenly distribute the roast beef onto the sliders.
  5. Top with the cheese slices, then place the tops of each bun on the sliders.
  6. Brush melted butter over the tops of the sliders.
  7. Cover with aluminum foil and bake for 20 minutes, then uncover and bake an additional 5 minutes, browning the tops of the sliders. Serve!

Notes

  • When choosing a roll, the sturdier the better! This prevents the bottoms of the sliders from becoming soggy while baking.
  • Provolone, Havarti, or pepper jack cheese slices all work great instead of the white cheddar cheese!
  • After baking, it helps to cut the sliders away from each other to make them easier to serve.
