I've never been much of a steak eater, and a girl can only eat so many hamburgers before dinnertime starts to become a snoozefest! So I set out to discover some more interesting ways to get my doctor-recommended fill of red meat— and this One Skillet Coffee-Rubbed Steak and Potatoes Dinner (with Brussels Sprouts) was born! I have to be honest, the entire inspiration for this meal goes to a local company out of Fort Wayne, Indiana called Fresco Spice Blends.  They are a small, family-owned company that started off by selling their spice blends at the local farmers' market. Their product became so popular that Meijer stores across the Midwest picked them up! I stumbled onto Fresco's Coffee Steak Rub when I was browsing at my local Meijer store the other day, and immediately knew it was time for me to try my hand at steak again. When I seared the steak with the coffee rub, it got a beautiful smoky, sweet crust that really complemented the flavor of the grass-fed skirt steak I used. If you've never worked with skirt steak before, it's a bit of an odd looking cut of meat—it's long and thin and doesn't look at all like a typical "steak" shape (think: not the steak emoji shape). Since skirt steak is so thin, it absorbs dry rubs and marinades quickly and cooks in a jiffy (meaning this whole meal is done in right around a half hour). And when you cut across the grain, the bites are tender and rich. Because of how long and skinny the cut of meat is, you'll probably want to cut it into equal-size sections to be able to fit into your skillet and get a good sear. Cookies, eggnog, and bourbon, oh my! After a few weeks of rich and decadent eating, I woke up one morning and my body said, "Hey, this has been fun, but let's have something green today!" So I listened to my body's intuition and headed to the kitchen to create this hearty, flavorful, and gloriously nourishing Shaved Brussels Sprout Salad. I like to remind folks that for a diet to truly be healthy, you have to nourish both your body and your soul! And that means enjoying your favorite chocolate chip cookies and listening when your body asks for veggies. Tuning into your body's innate wisdom is a skill that is honed over time. Don't expect to be able to do it overnight—I sure as sugar couldn't. But after a little bit of practice (and maybe some reading and homework), you'll soon find the diet that makes both your soul and your body feel its best. Shaved Brussels sprout salad is winter seasonal eating at it's best!

This salad is such an excellent way to bring fresh, raw veggies to the dinner table in the winter without having to head out and buy $20 worth of out-of-season ingredients. You can nab almost all of the ingredients for this salad at your local winter farmers' market (they have those where you live, too, right?). Brussels sprouts, onions, and apples are all excellent winter storage crops, meaning they're readily available locally for most folks in the wintertime. Using fresh, in-season produce makes for a salad that tastes fresh and healthy, but is still hearty and filling—just like food should be when the temps are low. You can grab Brussels sprouts on the stalk or off for the recipe, but just make sure to grab fresh ones. Frozen won't do here. And while it’s technically spelled Brussels sprouts, whatever you call them—Brussels sprouts or brussel sprouts—they are a delicious way to nourish your body!

What do raw Brussels sprouts taste like?

You might be afraid to try raw Brussels sprouts (after all, they are so tasty roasted with some bacon and apples), but I promise raw Brussels sprouts are something you have to test out! In fact, if you are a Brussels sprout-hater, you have to try this salad out! The sulfur flavor that a lot of people dislike about Brussels sprouts comes from cooking (specifically, overcooking) the sprouts. When you eat them raw? No sulfur flavor. I'm sure my parents had me try them as a kid and I said, "YUCK!" and spit them back out. But as an adult? I just started to get on the Brussels train a few years back. I love how sweet, crunchy and caramelized the little leaves get when roasted in a scorching hot oven. They are amazing roasted on their own with just a little bit of olive oil, salt and pepper, but sometimes, you want to up the ante just a little bit. WITH APPLES. AND BACON. Boom. Roasted Brussels Sprouts with Apples and Bacon Roasted Brussels Sprouts with Apples and Bacon Because Brussels naturally get sweet when roasted, it works well to pair them with other sweet foods like apples and maple syrup. A little bit of salty bacon helps keep the flavor from tipping too far to the sugar-y side. I love this side dish because it works for fancy dinners like Thanksgiving, but it  comes together in a flash and would be a great veggie side for any weeknight dinner, as well. To prepare Brussels sprouts for cooking, I like to lop off the stem end of each sprout with a sharp knife and then halve them. By halving them, I find that the roasted yummy flavor gets in every little crevice of the sprout. It is worth the extra time it takes to slice and dice 'em. When looking for Brussels in the store, look for smallish, tightly packed sprouts. You'll lose a few leaves when trimming, but ideally, the sprout should mostly stay together. We drove up to my sister's house to have dinner with a whole gaggle of friends and family. JuneBug and I had to duck out of the festivities a few times because all the holiday cheer was a bit too much for a five-month old's sensory processing, but it was still a very successful first turkey day for the little nugget. My sister has been hosting Thanksgiving for years now, and has it down to a science. She does almost all of her cooking ahead of time, and delegates a lot of the dishes (including delegating the turkey cooking to my brother-in-law, who did two turkeys this year—one grilled and one smoked). They've done such a great job of making Thanksgiving Day low-stress for themselves and their guests. That's definitely not a skill I've learned when cooking a big family meal.
