I think a common misconception about a plant-based diet is that it’s just a bunch of salads. So not true! A plant-centered meal can be just as hearty and stick-to-your-ribs-y as a meal with animal products. And this big ole plate of spaghetti and vegan meatballs is a perfect example of that.
I posted my first meatless meatball recipe back in 2011 after getting a recipe emailed to me by one of my coworkers. I was really happy with the taste of the recipe, but now looking back at it, the ingredient list was a little unwieldy. It had 17 ingredients just to make some daggum meatballs! For years now, I’ve been working on perfecting that vegan meatballs recipe with these main goals in mind:
  1. Reduce the ingredient list as low as possible (it’s down to 10 for the base recipe).
  2. Use only pantry staples (the weirdest ingredient here is walnuts).
  3. Keep it delicious, meaty, and hearty (it totally is).

Woohoo!

What are meatless meatballs made out of?

There are a lot of great meatless meatball recipes out there, but not a lot of great meatless meatball recipes that don’t call for specialty ingredients like tempeh or TVP or tofu or wheat germ or seitan. These vegan meatballs are made using only ingredients that are regularly kept in my pantry. They are all 100 recognizable—no soy protein isolate here! Here's what's in these meatballs:
  • Chickpeas
  • Onion
  • Garlic
  • Walnuts
  • Oats
  • Brown rice
  • Soy sauce (or tamari if gluten-free)
  • Ketchup
  • Herbs and spices

This vegetarian curry is an EXPLOSION of awesome flavor. And the best part? It comes together in less than 20 minutes. Serve it up with some hot-off-the-presses naan, and you’ve got yourself an amazing healthy dinner that the whole family with love. If you've never made curry before, it's nothing to be afraid of. The best way to get the curry flavor you're used to from your favorite South Asian restaurant is to use curry paste. Yes, they sell curry powder at most grocery stores, but the flavor of typical curry spices tends to fade very quickly after grinding—so powder form isn't the best way to get robust flavor. Curry paste is the wet version of curry powder, and you can probably find it at your regular supermarket in the international foods aisle. Because it is wet, it keeps the flavor of the spices nice and robust, and having a bottle of curry paste in the fridge makes it a BREEZE to make a weeknight curry like this one. For this recipe, you're looking to pick up red curry paste—Mae Ploy brand is one that a lot of folks like, but I can't find it at my supermarket, so I usually just use Thai Kitchen. Even if you don't grow a garden yourself, you can pretty much always guarantee some surprise produce from co-workers, friends, family, neighbors, and even strangers during the summer in Indiana. As a gardener, there is always some point where you can't even think about eating another spear of asparagus/cherry tomato/zucchini, and you start to give away the rest of the crop to every single person you see. There is even a whole holiday dedicated to sneaking extra zucchinis onto your neighbor's porch. Chickpea flour is one of my favorite gluten-free flours to experiment with in the kitchen. Made from finely ground chickpeas (garbanzo beans), the flour is packed with protein and fiber. It has just a slight chickpea flavor that can be either complimented or hidden with other flavors, depending on your end goal. So far with chickpea flour, we've made pancakes, socca, and the world's creamiest and smoothest hummus. Seriously, it is worth buying a bag of the stuff just for the hummus. You can normally find it in the gluten-free baking section of your grocery store. We buy Bob's Red Mill brand. The beauty of this pasta dough is in its total simplicity. Just a handful of ingredients– and one happens to be water. It doesn't get much easier than that. The end result is a soft pasta with a slightly nutty flavor from the flaxseed. You won't be fooling any die-hard white/refined pasta fans, but if you tend to like more hearty carbs, this is a pasta for you.
