I have something to tell you guys and you aren't going to like it. But it's the truth and I think we have a relationship built on trust and honesty, so here goes... The fact is, in just a few days, you are going to be sick of Thanksgiving leftovers. I know. I know. Right now, that seems like an impossible outcome. It’s Thanksgiving week, and you are so excited for all things turkey and gravy, you can't even fathom not wanting that food. But I promise you, someday in the near future (Saturday? Sunday? Monday?), you are going to go to the fridge, stare in the face of that giant pile of slowly-dwindling leftovers and say, "Meeeehhhhhhh. I don't want another giant plate of carbs." And you'll remember this post and think, "Gee whizz, gosh golly! I wish I would have used some of those leftovers in that soup." Ingredients for Turkey Vegetable Soup - carrots, turkey, veggies, potatoes, celery The idea behind this soup is to take the remnants from the Thanksgiving table and combine them seamlessly into a delicious, healthful turkey vegetable soup. Shrimp and grits (or more commonly "shrimp 'n' grits") is a Southern food cornerstone, and it was a staple on my Southern Midwestern dinner table growing up. Cheesy, stone-ground grits are topped with some plump shrimp sautéed in a lemon-garlic pan sauce. It's topped with crispy bacon, bright green onions, and a sprinkle of cayenne pepper for kick. Chili is a pretty personal dish. In some regions, it's sacrilege to put beans in your chili. Other people like chili so hot it makes your eyes water. I personally love thick and hearty chili, but I know some folks like chili thinner like soup. It's hard to land on a chili that everyone loves, but let me tell you, I've got one. Meet my Taco Turkey Chili. I've never met someone who didn't like this taco chili! It's a recipe that's been in my family for years. It has been served to hundreds of people and met with hundreds of rave reviews—including from the girls on my dorm floor during college. Whenever I'd come back from a weekend visit home, my Mama would send me with a big pot of taco chili, a bag of tortilla chips, and a tub of sour cream. We'd line up the chili, chips, and cream on the floor of my dorm room and invite all of our floormates over to snack on homemade chili and gossip about the boys' floor (usually while watching Friends or ER). The "taco" part of this turkey chili comes from its super easy flavor secret ingredient—taco seasoning!   • Dried split peas—These will probably be with the dried beans at your grocery store.
  • Vegetable broth
  • Cherry tomatoes
  • Frozen corn or fresh corn sliced off the cob
  • Fresh parsley, basil, oregano, and chives—We give you a suggestion for how much to use of each, but feel free to mix and match based on what you have.
  • Lemon—If you’re really in a pinch, you can use bottled lemon juice. But I recommend using a fresh lemon, so you can use the zest too!
  • Olive oil
  • Dijon mustard
  • Garlic powder
  • Maple syrup—Yep, maple syrup! It will add just a touch of sweetness to the dressing.

So what do you do with all those tomatoes? Well, anything! Remember that cherry tomatoes are still just tomatoes—turn them into salsa or sundried tomatoes or chili or, like we do here, a quick roasted tomato sauce. The sweet, fresh flavor of those in-season tomatoes makes this pasta so simple and so beautifully tasty. It's a hearty, cozy soup that'll usher us into fall, but it uses fresh, local corn that I picked up at my local Meijer store.
