The best part? It only takes two minutes! Side-angle shot of Homemade Mayo getting spooned out of a glass jar If you’ve ever tried to make mayo at home, you might know that it can be finicky and time-consuming. You can literally go from no mayo to homemade immersion blender mayo in less than two minutes, just by pushing a button. After you read this post, you’ll never (EVER!) need to buy mayo again. No more shelling out $9 for a little jar of the high-end organic mayos that you use up in one sandwich-making session. Spinach and Feta Mini Quiche Recipe https://wholefully.com/mini-christmas-quiche/ https://wholefully.com/mini-christmas-quiche/#comments Thu, 09 Dec 2021 07:00:01 +0000 http://backtoherroots.com/?p=14846 These mini quiche are a holiday appetizer favorite, because they never disappoint and can be prepped ahead. They are rich, flavorful, and adorable! Overhead of spinach and feta mini quiche on a platter garnished with a fresh parsley sprig. These mini quiche are always the star of holiday potlucks and pitch-ins—there are never any leftovers and folks beg for the recipe! They are rich, flavorful and they are totally adaptable—switch out the cheeses, leave out the spinach, add some ham. Whatever you want! But quite possibly the best part of these quiche is that they can be made ahead and frozen—making your holiday season so much easier! Make a big batch during a quiet weekend and stash them in a freezer bag, and then pop out a dozen or so at a time for holiday parties all season long. Let’s make some quiche! A hand holds up a mini quiche appetizer.

What do I need to make mini quiche?

First up, you’ll need to have two pie crusts ready to go. We highly recommend making your own pie crust, but in a pinch, store bought pie crust (the one that comes in rolls in the refrigerated dough section) will do the trick. For the mini quiche filling:
  • Butter—This butter does not need to be frozen!
  • Red pepper flakes—for a hint of heat
  • Minced garlic
  • Onion—Caramelized onion takes this recipe to the next level of tastiness
  • Honey—Honey adds a hint of sweetness to balance out the red pepper flakes
  • Chopped frozen spinach
  • Sliced mushrooms
  • Feta and cheddar cheeses—These are the cheeses I recommend, but you can substitute for any of your favorite cheeses.
  • Eggs and milk—To make the classic quiche filling, you'll need eggs and milk.

Do I need to use homemade pie crust?

You don’t, but I would highly recommend it! I used to be nervous about making homemade crust, but then I tried it and haven’t looked back. Trust me, homemade pie crust (or gluten-free crust) is super simple, and you can really taste the difference! Read the post »]]>

Meal Prep Breakfast Egg Muffin Cups: 4 Recipes to Try! https://wholefully.com/egg-cups/ https://wholefully.com/egg-cups/#comments Thu, 12 Mar 2020 10:00:19 +0000 https://wholefully.com/?p=32191 I know you guys love Overnight Oats when it comes to meal prep breakfasts (and I really like them, too), but my absolute favorite meal prep breakfast? EGG CUPS! AKA: egg muffins, baked eggs, or egg muffin cups. These grab-and-go bite-sized breakfast muffins are easy to make, packed full of nutrition and flavor, and totally customizable—we’re giving you four flavors to try out in this post, but you can let your imagination run wild! I'm sure part of that is the reason that I love egg muffin cups so much is that we have our own roving flock of chickens to provide the main ingredient, but a big part is that I'm a 100% savory breakfast kinda gal. I’ll reach for eggs and sausage over pancakes and syrup every single time. There is just so much robust flavor in the savory breakfast world—and these egg muffins explore that with flavors like Turkey Spinach, Sweet Potato Chive, Ham and Cheddar, and Caprese! Four varieties of egg cups are uncooked in a muffin tin.

How do you make baked egg muffins?

Meal prepping egg cups is as simple as spraying a muffin tin with cooking spray (or using silicone baking cups), and then layering the ingredients in the recipe in each cup. Then you bake it in 350°F oven until you reach the desired egg yolk consistency (10-12 minutes for a soft yolk, 12-15 minutes for a hard yolk). All of these egg muffin flavors bake for the same amount of time, so you can mix and match flavors in the same batch without any troubles.

Why should you make breakfast egg cups?

I like making these egg cups because they make breakfast (and snacks!) just so super simple! They take just a few minutes to prep and cook, and then you have easy grab-and-go breakfast all week long. And if you’re someone like me who prefers savory foods in the morning, this is a great alternative to classic meal prep breakfasts like overnight oats. Read the post »]]>

Four Sweet Potato Toast Ideas You Can Meal Prep https://wholefully.com/sweet-potato-toast/ https://wholefully.com/sweet-potato-toast/#comments Mon, 25 Mar 2019 11:00:49 +0000 https://wholefully.com/?p=38263 I’m low-key obsessed with sweet potato toast, friends. If you’ve never heard of it before, sweet potato toast isn’t some new fancy sweet potato-infused bread you get at your local natural foods store—it’s literally just cooked planks of sweet potatoes that you use in place of bread in your favorite toast combinations. It’s so beautifully simple, and it adds so much awesome flavor, texture, and nutrition to your daily dose of avocado toast. And if you happen to struggle to digest grains, it’s a wonderful gluten-free, grain-free alternative to sandwich bread. Four types of sweet potato arranged on a white background Most sweet potato toast recipes will tell you to simply slice your sweet potatoes into planks, and then plop them in the toaster for a few rounds. I have to tell you, I have never had success with this method. I don’t know what kind of magic toaster people have that I don’t, but using this method always gives me toast that is burnt and crispy on the edges and uncooked in the middle. And it takes FOR-EVER.
