Summer means meals on the grill, fresh fruit and veggies, and summer cocktails! One of my favorite summer drinks is the peach Bellini. Nothing says summer like the taste of a ripe peach and this cocktail captures that flavor with a fresh, frosty vibe thatโs perfect for a hot summer brunch.
What is a peach Bellini?
A peach Bellini is the signature cocktail created by a bartender in Venice, Italy back sometime between 1934 and 1948. The bartenderโGiuseppe Ciprianiโnamed the drink after the painter Giovanni Bellini because the pink of the drink reminded him of the color of one of the saintโs togas in Belliniโs painting. This signature cocktail uses peaches and two different alcohols to create a sweet, soft drink thatโs perfect for summer.
What alcohol is in a peach Bellini?
There are two types of alcohol in a peach Belliniโprosecco and peach schnapps. Prosecco is a type of sparkling wine that comes from Italy. It has a light and fruity taste with a complex flavor profile that pairs well with this cocktail. Peach schnapps is an intense spirit with a strong fruit flavor. As the name suggests, it tastes like peaches, which makes it the perfect alcohol for making peach Bellinis.
What if I donโt have peach schnapps?
If you donโt have peach schnapps, donโt panic! You can substitute an additional half cup of prosecco in place of peach schnapps. This will decrease the peach flavor a bit, but itโll still taste great. Alternatively, you can substitute peach vodka in a 1:1 ratio for the schnapps.
What is the difference between a mimosa and a Bellini?
You combine orange juice and champagneโor sparkling white wineโto make a mimosa. Alternatively, you make a Bellini with peach puree, peach schnapps, and prosecco. A Bellini is slightly thicker and sweeter than a mimosa. It also has a creamier texture thanks to the pureed peach.

Whatโs a Bellini made of?

To make a peach Bellini, add all your ingredients to a blender or food processor, mix, then serve! Thatโs it. You can garnish your drink with mint leaves, peach slices, or even ripe berries.
How far in advance can I make a peach Bellini?
Itโs important to serve your peach Bellini right after blending. This isnโt the type of drink you can make ahead of time in large batches to pull out of the fridge and serve. If you need to store the Bellini in the refrigerator for a bit, itโll keep for up to two hours. Thankfully, this is an incredibly simple recipe to make and you can whip it up in under five minutes.

Ingredients
- 1 1/2 pounds frozen peaches
- 2 cups prosecco
- 1/2 cup peach schnapps
Instructions
- Blend all ingredients in a high-speed blender until smooth. Pour into champagne flutes. Garnish with mint leaves, berries, or peach slices and serve immediately.
Notes
- This recipe is best served immediately and doesnโt keep in the fridge for more than a couple of hours.
- You can use white wine in place of the prosecco if desired.
- Peach schnapps is optional, and you can use 1/2 cup more prosecco in place of the peach schnapps, but the peach flavor will be slightly diminished. You may also use peach vodka in place of the peach schnapps.
