Friday night is always pizza night in our house. Sometimes that means a homemade pizza. Sometimes that means we order in. And sometimes that means we just pop a frozen pizza in the oven, but pizza is always on the menu on Fridays! This means I’ve had a lot of pizzas in my lifetime, and I can safely say that one of my favorite pizzas is this classic Chicken Spinach Alfredo Pizza. We’ve been making it since the early days of our marriage, when I happened to stumble on a recipe for Turkey Alfredo pizza in an issue of Cooking Light. We pretty much never have turkey breast just kicking around (except right after that one particular turkey-tastic holiday), so we made the swap for chicken, tweaked a few other items, and we’ve been loving this combo ever since. Smoothie Booster Packs https://wholefully.com/smoothie-booster-packs/ https://wholefully.com/smoothie-booster-packs/#comments Thu, 25 Jan 2024 15:15:29 +0000 http://backtoherroots.com/?p=7869
The recipe was originally published in August 2011. It was retested with reader feedback, rephotographed, rewritten, and republished for your enjoyment in May 2017.
It is no secret that I love smoothies. I especially love smoothies for an on-the-go breakfast. I can make them at home and then take them along wherever the breeze takes me. What I don’t like about smoothies? The amount of ingredients they take. You are probably saying, “Fruit. Milk. Ice. That isn’t that many.” And you are right, that isn’t! But to make my smoothies into super breakfasts, I load them full of powders, seeds, and other nutrition boosters. By the time I get out, measure and put away all of my additions, a smoothie can take upwards of 20 minutes to perfect. Ridiculous! And so not the speedy breakfast option I want it to be. So, a few years back, I came up with the idea of these smoothie booster packs—and they’ve saved me so much time over the years! These smoothie booster packs have all kinds of goodness in them, and they are just waiting in the freezer to be popped into whatever smoothie I’m making that day.
These smoothie booster packs are totally customizable to what you like in your smoothies and what nutritional goals you have. Looking for a boost of protein? Add protein powder. Want to get your dark, leafy greens in a drinkable version? Throw in some spinach. Looking to quell seasonal allergies? Toss in some local bee pollen. It’s up to you to craft your perfect booster packs! I have a basic recipe for my “normal” booster packs below, but here are some options (plus I’m sure there are a whole bunch I’m forgetting) that you can add in—I’ve added affiliate links for each of my favorite brands where applicable: Read the post »]]>

15-Minute Vegan Spinach Artichoke Dip https://wholefully.com/vegan-spinach-artichoke-dip/ https://wholefully.com/vegan-spinach-artichoke-dip/#comments Wed, 13 Dec 2023 15:00:29 +0000 https://wholefully.com/?p=49518 I have such a love/hate relationship with dairy. My tastebuds love it, but my body does not. Insert sad trombone. Because of my body’s rebellion against all things cheese, I’ve made it my life’s goal to try to make really freaking good dairy-free options of some of my favorite foods. We’ve tackled Parmesan cheese, ice cream, sour cream, coffee creamer, and even eggnog! And today, I’m showing you how I made the king of the appetizer circuit—Hot Spinach Artichoke Dip—totally dairy-free, vegan, and plant-based. Vegan spinach artichoke dip in a cast iron skillet, surrounded by fresh spinach and artichokes.

How do you make spinach artichoke dip vegan?

Regular hot spinach artichoke dip is typically made with tons of cheese (both shredded and cream cheese) and heavy cream or milk and sometimes even sour cream. But in my version, I use a garlicky, plant-based cashew cream sauce that thickens up to a gooey, creamy, can’t-believe-it’s-not-cheese dip that you’re going to love! There are two secret ingredients that give this vegan version its cheesy flavor and texture:
  • Nutritional Yeast: If you’ve been around the dairy-free or vegan world for awhile, you probably have nutritional yeast (or “nooch” as some folks call it) in your pantry. This all-natural, plant-based yeast has a slightly cheesy, nutty flavor that can help add some depth of flavor to vegan cheese sauces. You can buy it online, or most major supermarkets carry it with the spices.
  • Tapioca Starch: To get the thick, fatty texture of a cheese sauce without any dairy, this dip uses tapioca starch. This gluten-free, grain-free thickener is available online and at most major supermarkets with their gluten-free flours. It’s also sometimes called “Tapioca Flour.” It’s great to have on hand for grain-free recipes like pizza crusts and chocolate chip cookies.

They are rich, flavorful, and adorable! Overhead of spinach and feta mini quiche on a platter garnished with a fresh parsley sprig. These mini quiche are always the star of holiday potlucks and pitch-ins—there are never any leftovers and folks beg for the recipe! They are rich, flavorful and they are totally adaptable—switch out the cheeses, leave out the spinach, add some ham. Whatever you want! But quite possibly the best part of these quiche is that they can be made ahead and frozen—making your holiday season so much easier! Make a big batch during a quiet weekend and stash them in a freezer bag, and then pop out a dozen or so at a time for holiday parties all season long. Let’s make some quiche! A hand holds up a mini quiche appetizer.

What do I need to make mini quiche?

First up, you’ll need to have two pie crusts ready to go. We highly recommend making your own pie crust, but in a pinch, store bought pie crust (the one that comes in rolls in the refrigerated dough section) will do the trick. For the mini quiche filling:
  • Butter—This butter does not need to be frozen!
  • Red pepper flakes—for a hint of heat
  • Minced garlic
  • Onion—Caramelized onion takes this recipe to the next level of tastiness
  • Honey—Honey adds a hint of sweetness to balance out the red pepper flakes
  • Chopped frozen spinach
  • Sliced mushrooms
  • Feta and cheddar cheeses—These are the cheeses I recommend, but you can substitute for any of your favorite cheeses.
  • Eggs and milk—To make the classic quiche filling, you'll need eggs and milk.

Do I need to use homemade pie crust?

You don’t, but I would highly recommend it! I used to be nervous about making homemade crust, but then I tried it and haven’t looked back. Trust me, homemade pie crust (or gluten-free crust) is super simple, and you can really taste the difference! Read the post »]]>

Spinach and Pomegranate Salad https://wholefully.com/spinach-pomegranate-salad-10/ https://wholefully.com/spinach-pomegranate-salad-10/#comments Wed, 17 Nov 2021 13:00:00 +0000 http://backtoherroots.com/?p=25393 I’ve mentioned it before, but I’m not the biggest of salad fans—I’m definitely not one of those people who can fill a mixing bowl with lettuce and happily go to town (I’m not a rabbit!). But I do love interesting salads like this one. I love the mix of flavors and textures. And I love that there are enough hearty mix-ins that it feels like a full meal. This bright and colorful Spinach Pomegranate Salad is great for everyday eating, but would also be a beautiful addition to your holiday table! Serve it at Thanksgiving or Christmas for a fresh addition to the menu. Pouring clementine vinaigrette over a baby spinach salad topped with sliced almonds and pomegranate arils.

What is in this pomegranate salad?

This colorful dish makes a perfect Christmas salad, thanks to its cheery reds and greens. For the salad itself, you'll need baby spinach, pomegranate seeds, toasted sliced almonds, feta cheese, and green onions. The whole thing is tossed with a homemade clementine vinaigrette. Intimidated by the idea of making your own dressing? Don't be! All you need to do is whisk clementine juice and zest with a few other ingredients, and you'll have a delicious, complex salad dressing.
