This meal is great for a weeknight, because the โhardโ part of these fajitas is taken care of by the slow cooker (and I put hard in quotes, because it isnโt even that hard). Chicken breasts, bell peppers, onions, and garlic are slow-simmered in a whole bunch of tasty Southwestern seasonings. Then all you have to do is serve them with tortillas and your favorite toppings!
What do I need to make crockpot chicken fajitas?

- Salsa. Store-bought orย homemade, any salsa that you like the flavor of will do!
- Boneless skinless chicken breasts
- Bell peppers. For the most visually-appealing fajitas, we like a mix of red, green, and yellow bell peppers, but any combo will work!
- Onion
- Fresh garlic
- Spices: chili powder, ground cumin, paprika, salt. For a shortcut, you can also useย taco seasoningย in place of the individual spices.
- Honey
- Lime juice. If you don’t have fresh lime juice, bottled will work.
- Tortillas. We used flour tortillas, but corn tortillas will work as well.ย
- Your favorite fajita toppings. We love halved cherry tomatoes, chopped green onions, sliced avocado, minced cilantro, guacamole, sour cream, more salsa, or black olives. You could even add cheese or shredded lettuce!

Ingredients
- 1 cup salsa
- 1 pound chicken breasts, sliced into thin strips
- 1 red pepper, sliced into thin strips
- 1 yellow pepper, sliced into thin strips
- 1 green pepper, sliced into thin strips
- 1 large onion, sliced into thin strips
- 4 cloves garlic, minced
- 2 tablespoons chili powder
- 2 tablespoons cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 cup lime juice
- 1 tablespoon honey
- Tortillas, cheese, lettuce, tomatoes, avocados, olives, etc. for serving
Instructions
- Pour the salsa into the basin of a slow cooker. Top with the chicken, peppers, onions, and garlic.
- In a small bowl, whisk together the chili powder, cumin, paprika, salt, lime juice and honey. Pour over the chicken mixture.
- Place lid on slow cooker, and cook on low for 6 hours or high for 4. Use a slotted spoon to remove the veggies and chicken and serve on warm tortillas with your favorite toppings.
