Ingredients

  • 1 1/2 pounds chicken breasts, boneless/skinless, cut into flat filets
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons unsalted butter
  • 1 tablespoon avocado oil
  • 1/2 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, drained & chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon dry oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Add the flour, 1/2 teaspoon salt, pepper, and garlic powder to a shallow bowl and stir together. Coat the chicken breasts on all sides, shaking off the excess.

  6. Add the chicken back to the pan and continue to simmer for 5 more minutes. Sprinkle with chopped fresh basil and/or fresh thyme, and serve!
